I was wondering of anyone knew the correct spelling for a dish called "Duck ala Rag (I know this is wrong).

I have heard of it before and would like to try and make it. Anyone ever heard of it before or is it made up? I've heard of Duck ala orange before. I looked on the main internet page and nothing came up

with vowels as in
duck à l'orange

please tell us something about this dish?

maybe rague / ragu / ragout / ragoût
or range (as in free range)

and the French for duck is canard

Like you I've heard of Duck ala orange but not the other.

I think you mean "ragout" which has a mark above the u. Check out wikipedia for starters. The site recipezaar has about 300 of them, and if not a duck (canard) one then use a chicken recipe.

Duck ala Orange?

Place (6) whole, dressed ducks in a cold water and baking soda solution for about 3 hours, in refridgerator, to pull the nastiness out of them.
Remove from water, rinse each bird thoroughly, and pat birds dry, inside and out.

Orange Sauce: In a Large Sauce Pan, combine
2 - 18 oz Cans of Concentrated OJ, made like you would drink it.
2 Jars seedless Red Currant Jelly
1 1/2 sticks of butter
2 orange rinds grated
1 tps Salt
1/4 cup White cooking wine

Heat mixture until it is almost at a boil, stirring constantly.

Chunk up a couple apples, some celery and a couple onions, combine in a mixing bowl
Salt inside body cavity of each duck, and stuff with apple, celery and onion mixture.
Arrange stuffed ducks in a large, deep roaster pan, and place a slice of bacon on each bird.
Pour orange sauce over birds, using 2/3rds of the sauce, reserve the rest for gravy.
Cover, and bake at 325 degrees for 4 hours.

Salad:
1 bag fresh Spinach
1/2 pound (or more) Bacon, fried crisp so it crumbles
1 Red Onion, sliced in rings
1 - 15 oz can of Mandarin Oranges, drained
Dressing: (Combine the below, and toss in salad just before serving)
1/3 cup Vegetable Oil
2 Tbs Cider Vinegar
1 tsp Salt
1 tbs Sugar
1/4 Tsp Dry Mustard

Side Dish: Wild Rice
6 oz Wild Rice
3 cups water
2 tbs Chicken Boullion
1/2 cup Chopped Onion
1/2 cup Celery, Sliced
1/2 stick Butter
6 oz mushrooms, sliced
1/4 cup Pecan Halves
Soak wild rice for 20 minutes in 3 cups cold water, bring to boil, add chicken boullion, cover, and simmer for about 60 minutes
While rice is cooking, saute celery and onions in butter in fryin pan, until they're tender. Add mushrooms and pecans, saute for about 5 minutes, remove from heat.
Combine wild rice with vegetable/ pecan mixture in a casserole dish, cover and bake at 350 for 45 minutes

You may be referring to duck foie gras, which is basically duck liver that has been fattened. This is considered a French delicacy.
