I made Beef Wellington from scratch for my wife on Valentines Day - the only other thing I had cooked before that was spaghetti bolognaise. The Beef Wellington turned out absolutely perfect and it made the day very special for both of us. Needless to say I have not been able to make a Beef Wellington as well as that day ever since but we will have been married 15 years this year...

My mothers dish "Rice Columbian".
It's made with Rice, Pork Chops, Bell Peppers, Condensed Soup, Mushrooms, and spices.
It turned our great and my home ec teacher loved it. I have also made that dish for friends and no matter how the rice turns out it still tastes good. I like my mothers version because she always browns the rice and it's crunchy.

Caramlized Onion and Goat Cheese Beef Wellington with Tomato Confit. Served along side Swiss Chard. Accompanied Baby Carrots with thyme and butter on a bed of fried spinach.
It turned out AWESOME!!! Although, I no longer use the swiss chard. I now serve it with a yam mash with goat cheese whipped in. Additionally, I leave out the carrots and serve it with braised fennel ontop of the bed of fried spinach.

Probably a crab sorta sandwich with loads of decorations. The tuna which is the main filling doesn't go well as because it turned to be soggy. I hated it but i loved the decors on it though!

Steak and kidney pie, at my husband's request when my in-laws were coming to dinner. I'd never made it before, never cooked for them before, was very nervous, but it was absolutely lovely and enjoyed by all, especially by mother-in-law, thank goodness.
It was a long time ago when I was still learning about cooking.

Toss up between a Spanish Wind Cake and a Croquemboche
Croquemboche is a tower of profiteroles drizzled with chocolate and caramel.
http://www.chefdecuisine.com/cuisine/learn/choux/CROQUEMBOUCHE.asp
A Spanish Wind Cake is a round "box" made of merangue - built in layers and assembled - filled with flavored whipped cream and decorated with stabilized whipped cream and candied violets.

Both were incredible successes. My friend gasp and almost cried when i "cut" the Spanish Wind Cake.
