I'm looking to try and add portabello mushrooms as a substitute for meat in mostaccoli....what would be the best way to prepare them? And to add to that, these are fresh from the produce section. Thanks!

For starters,U MUST,MUST,MUST remove the "GILLS" with a spoon.Carefully.Next,drizzle a lil Extra Virgin Olive OIl over the mushrooms.Sprinkle on a lil bit of salt,pepper,rosemary,and thyme.Either grill or roast in the oven(on a cookkie sheet at 300 degrees) until loose.Then serve.

you can put them in a steamer or bag and place them in the microwave then add them to your dish. This way you cut out the butter or oil from sauteing them for a healthier dish. Another yummy recipe using portabellos is to take the huge ones and scrape out the center parts, spread some marinare sauce in the bowl part and sprinkle with mozarella cheese, greenpeppers, anything really, and place in the oven for 10-15 min at 300. there like mini pizzas

slice thinly and saute in butter
nice flavour in Cram of mushroom soup as well

We saute them in olive oil, and they are delicious and healthy!
