Beer Battered Onion Rings

Ingredients:
Beer Battered Onion Rings
* 2 x Vidalia onions, or other sweet onion
* 1 cup beer
* 1 cup flour
* 1 tbsp paprika
* 2 tsp salt
* 2 cups peanut oil for frying
Directions:
Beer Battered Onion Rings
1. In a medium-size pot, heat oil to 350°F.
2. Slice onions in 1/4-inch slices and separate rings.
3. In a medium bowl, mix beer, flour, paprika and salt into a batter.
4. Dip onion rings in batter until thoroughly coated, then fry in small batches for approximately 2 minutes, or until golden. Turn once during frying. Remove and dredge on a paper towel. Serve immediately.

1/4 cup cornmeal
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon cayenne pepper
1 egg
1 cup buttermilk
Oil for deep-fat frying
LIME DIPPING SAUCE:
2/3 cup mayonnaise
3 tablespoons honey
2 tablespoons lime juice
2 tablespoons spicy brown or horseradish mustard
1 teaspoon prepared horseradish
Cut onion into 1/2 in. slices; separate into rings. In a bowl, combine the flour, cornmeal, baking powder, salt, baking soda and cayenne. Combine the egg and buttermilk stir into dry ingredients just until moistened.
In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Dip onion rings into batter. Fry a few at a time for 1 to 1-1/2 minute on each side or until golden brown. Drain on paper towels (keep warm in a 300° oven).
In a small bowl, combine sauce ingredients. Serve with onion rings. Yield: 4 servings.

-crush a whole sleeve of saltines/ pour 1 cup of milk in bowl /2 eggs beaten in a bowl /** slice onions in rings dip in milk, then egg ,then cracker crumbs press down then back in milk- then deep fry (or can use canned bread crumb's )
