The short answer is: We say this because we can't stand the idea of China being diminished or dissolved.
Long answer: Since the days of China's unification by the Qin emporer (Qin shi huang di), China has never truly shrunk (there have been competing claims to the country but it was always to claim the whole country), and the idea that China would start to dissolve is anathema to us. It's the same reason why Lincoln took the US to civil war when faced with the prospect of the Southern states breaking away. The only time in Chinese history when it really seemed like China was going to be broken up was during the colonial period in the 19th century when competing world powers carved out various "spheres of influence" in China's prosperous Eastern seaboard. This period is still seen by many Chinese people as China's weakest time and anything that would resemble this time (such as a diminishing of the country's size and territory), is heatedly resisted by all Chinese people.
Even in Taiwan, the Republic of China's official map lays claim to all of outer Mongolia, which is today an independent country. In fact, when the ROC in Taiwan attempted to redraw their maps to omit the inclusion of outer Mongolia, the mainlanders became very angry and the attempt was scrapped. It's a matter of not only national pride, but also a cultural "never again!" issue.

Most people fail to do their research and realise that Tibet has been part of China since the days of the Qing dynasty which only ended in 1912. Before that the British made a military expedition to Tibet to secure it against a possible Russian threat to British India, killing over 1000 Tibetans on the way. It was touch and go if the British would annex Tibet, seizing it from China through force. In a way saying that Tibet should become independent is like saying Scotland should secede from the UK, the fact is that Tibet is not,economically, able to survive as a nation and is able to benefit more from Chinese governing(eg: see the big railway being built in Tibet connecting it to China). It is true that it denies them the right to self determination. Independent Tibet would probably be annexed by a nation like Pakistan or India and considering how much either of them hate each other there would be a war, possibly nuclear, over the territory. At the very least Tibetans are closer to Han Chinese in terms of ethnicity and would possibly suffer more in the form of racial and religious discrimination from Indian or Pakistani rule, the kind of suffering the Chinese inflicted in the 20th century was not based on racism nor were Chinese conquests in the last several thousand years. Most people have accepted that Tibet will be ruled by China and the current global economic and political situation is such that few will want to interfere.

No. China claims it was part of the original empire, but Tibet was an autonomous country for hundreds of years, and the culture is definitely different. China aggressively invaded the region, and Tibet doesn't have the resources to force them back out. King Songstan Gampo founded the independent country of Tibet back in the 600's.
