I am looking for a soft plain chocolate cookie dough. (no nuts, no chips no nothing)

I want to make cookies that are round so that I can put a filling in the middle and make what would look like an oreo, but I want the cookie to be soft.
So can someone please give me recipe for the dough. Thanks

I also need to be able to roll them out and cut them out with a cookie cutter.
