I am making a rump roast for dinner tonight (its in the oven) and its the first time I have made a big meal like this... (I am a total take-out junkie!)
I found a recipe that says to thaw the roast, place it in a roasting pan-- Mix dry onion soup mix w. cream of mushroom soup, pour soup mix over the roast. Cover with foil and bake for 2 hours.
Now, my question is- when do I add vegetables (using celery, potatoes, carrots) to it, and how? Like do I quarter the potatoes and dice up celery/carrots and toss them in there? Add anything else? It's been in the oven for about 10 minutes, and our oven is pretty low powered, so Im thinking about cooking it for 2.5 hours... help! Also, about gravy, I cheated and got Roast Gravy dry mix... do I put this right on the roast or wait until it is done?
PS- I hate cooking! haha

with the recipe you are using (the mushroom soup over it)
you don't put the veggies in with the roast - roast them seperatly in a pan
your oven is low powered? you need to have the oven at the right temperature.

again because you are using a mushroom soup recipe you do not put any gravy mix on the roast - what do the directions on the package of gravy say?

to roast your vegetables:
cut up onto large chunks, toss with oil, salt and pepper, put in roasting dish, roast until tender (about 1 - 1.5 hours depending on your oven temp)

Okay - about an hour into cooking, depending on what temperature you are baking at (probably around 350), add in your quartered potatoes (peel still on, scrubbed well), carrots sliced into 1-2 inch chunks, and your celery (diced, because it's really just for flavor). Place the veggies around the base of the beef, kind of tucking them under the edges. Just make sure you add enough beef broth (canned is fine) to keep it moist. Do NOT put the gravy mix directly on the roast - you will only end up with glazed roast and no gravy (not a good thing). You can mix the gravy mix with water or beef broth in a small saucepan on the stovetop while the roast sits. Once the roast is done, make sure to uncover it and let it stand for about 15-30 minutes before carving to let the juices redistribute - otherwise you end up with a dry, yucky roast. I usually put vegetables in at the beginning but I guess you could put them in after the roast his been cooking about an hour, would give them 1.5 hours. Yes, cut the vegetables up some. As for the gravy, aren't there directions on the package on how to make it? You would make it separately.

i usually just use a crock pot for roast. season the roast and sear it on all sides in a pan. put in crock pot with water beef bullion celery, carrots, onions and paotatoes and let it cook for at least 2 hours. falls apart. yummy

I always put my potatoes and carrots in at the same time as the roast and cook it for about 3 hrs @325.....and it just falls apart.
