Hot and Sour Ramen
(this is a tasted-down version of what you'd get in a Chinese restaurant-and quick than normal recipes-but we LIKE it)
4 cups water
2 packages Ramen noodles (beef flavor is best)
apple cider vinegar
soy sauce
Optional ingredients: sauted mushrooms, bean curd, anything you'd normally have in Hot and Sour Soup. I've only put mushrooms in, but I'm sure if the others were pre-cooked they would work as well.
Put both packages of noodles and the seasoning packs in the water. Bring it to a boil. Turn heat down to simmer and add soy sauce and vinegar. I never measure mine. You can start out with 4 Tbsp. Vinegar and 2 Tbsp. soy sauce. I probaby add more. Test it and see if you like it and then fix it to suit your taste.
(At this point, you could thicken it if you want. Stir 1 Tbsp. corn starch into 1 cup cold water. Add to soup slowly. Stir. Bring to a boil. Then turn it back down.)
Let it simmer for about 10 minutes. Meanwhile put in your mushrooms (already sauted for a while is best to make sure they're soft enough) or whatever you want.

Bake some chicken. Boil rice. Add turmeric, peas, almonds, salt, and cashews to the rice, when just a little water remains in the rice. Cover the rice and cook on really low fire for about 5 minutes or a little more until all of the water evaporates and rice is done. Pan fry some tilapia. Add some whole black pepper, lemon and rosemary to the fish. when it is cooked. Let it sit for about 2 hours. Mix the rice, tilapia and chicken. Garnish with crushed peanuts and parsley.
