Potato Cheese Soup

3 tablespoons butter
3 cups leeks, sliced
4 cups potatoes, peeled and diced
8 cups water
Salt and pepper
1 teaspoon Dijon mustard
1 cup grated Cheddar cheese
1/2 cup heavy cream
In large pot melt butter. Add leeks and cook over medium heat, stirring occasionally. Add potatoes and season with salt and pepper. Add water and bring to a simmer. Cook until vegetables are tender. Place 3/4 of soup into a blender and puree, return to pot and bring to simmer. Add mustard and cheese. Stir until smooth. Add cream and bring to simmer. Pour into bowl and serve.

Bob Evans Cheddar Baked Potato Soup Recipe
1 can Campbell's Cheddar Cheese Soup
1 can chicken broth
1 pound grated Cheddar cheese
4 cups whole milk
1 soup can milk
2 tablespoons butter
2 tablespoons cornstarch
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic salt
7 medium potatoes, diced to 1-inch and boiled
Add soup, 1/2 the broth, 1 can milk, and stir. Add cheese and remaining milk. Stir in cornstarch with the rest of the broth. Add cornstarch mixture to soup. Add spices and butter. Bring to a boil, reduce heat and simmer for 15-20 minutes.
Add boiled potatoes and simmer 15 minutes more. For the best taste, let cool and reheat. To serve, top with chives and bacon bits.

Potato-Cheese Soup
Ingredients:
3 tablespoons butter
1 medium white onion, thinly sliced
1 large garlic clove
6 potatoes, peeled and thinly sliced
3 cups water
2 cups whole milk
2 cups grated cheddar cheese
salt to taste
Melt the butter in a soup pot and fry the onions for 3 minutes (do not let the onions brown). Add the garlic and continue to saute for an additional 1 or 2 minutes. Add the potatoes, and water. Bring to a boil; reduce heat and simmer until the potatoes are tender even mushy.
Mix vigorously with a spoon, add milk and spices. Cook over medium heat until the milk begins to simmer, then add the cheese and stir until it melts. Do not boil vigorously - it causes trouble with the cheese (clumps or sticks to bottom). Serves 4-6.

I don't have exact measurements, but here's the ingredients for the potato soup from Rafferty's.
Potatoes
Cream Cheese (1 lg block)
Butter (1 stick)
Garlic (about 2 cloves, minced)
1 Can Cream of mushroom soup
Bacon Bits
1 Can Cream of Celery soup
Onion Flakes to taste
Milk
Salt & Pepper

POTATO CHEESE SOUP
6 TO 8 LARGE BAKING POTATOES
2 CUPS MILK
4 CUPS CHICKEN BROTH
2/3 CUP FLOUR
2/3 CUP BUTTER
8- 12 STRIPS BACON COOKED
1 OZ. CUP OF SOUR CREAM
8OZ OF SHREDDED CHEDDAR CHEESE
SALT AND PEPPER TO TASTE.
Bake potatoes until soft and peel. Mash or cube your potatoes depending on how you want the consistency of your soup.
In large soup pot combine butter and flour to make roux. Cook for 1 minute, then slowly whisk in liquids.
Add salt and pepper. Then add potatoes , cooked bacon, cheese, and at the last minute sour cream. Add more salt and pepper to taste.
Soup will be thick. Add milk to reheat. It gets better the more you reheat it.
