Easy Skewer Maple Chicken from Good Pepper

Here is an easy dish that can be made with little prep and cleanup time.

Take a few chicken breasts and slice down the middle. Don't cut them all the way in half. Leave about 1/2 inch. Stretch the chicken apart . Pierce with a skewer. Marinate in 1/4 cup maple syrup and 1/4 cup hot sauce and 1/4 cup vinegar for 2 hours. Then place on a hot grill. Turn a few times until done. While the chicken is cooking mix a small amount of lemon juice, ginger and soy sauce in a bowl with some diced onion. Just before you take the chicken off the grill lightly baste with the sauce.

This is the way my French grand-mother always cooked vegetables and they are sensational, particularly for vegetable phobics. It's very simple. -Peel and cut different vegetables and dice them (about 1 inch cubes roughly). -In a large shallow pan melt 1 oz (25gr) of butter or olive oil but do not burn. - Toss all your veg until they are well coated (2minutes)over highish heat. -Add a glass of water, turn down the heat to low and put on the lid. -Leave to simmer until tender. Keep an eye on it and if necessary add a little more water. I have not found any veg that can't be cooked this way, carrots, broccoli, peas, sweet potatoes, cauliflower, squash, potatoes, celery etc. A combination of several works best. You don't need to add salt as the flavour of the veg really comes out. The vegetables do not go mushy or fall apart because of the coating of oil or butter. Very little water is needed. All the veg cook at once. The whole thing takes no longer than 15 to 20 mn. Bon appetit.

Get some country style (pork) ribs at a good butcher.
Have him or her trim them.
Par boil the ribs (a short boil in water seasoned with pepper, salt, and bay leaf) for five minutes, drain, and then put on coals until they cook through - 165 degrees inside.
While they are cooking, mix one cup molasses, one half cup rice wine vinegar, a tablespoon tomato paste or catsup, and bring to a boil. Lower heat, and simmer 10 to 15 minutes. Adjust seasonings for mix of sweet, sour, and spicy.
During the last few minutes of grilling, baste the ribs with sauce, but don't let them burn.
enjoy

Grilled Pineapple
1 large ripe pineapple
3 tablespoons honey
1 tablespoon freshly squeezed lemon or lime juice
1/2 teaspoon freshly ground black pepper
Trim, core, and peel pineapple. Cut into quarters from top to bottom. Slice out the core from each quarter. Cut each quarter slice into four pieces (two pieces lengthwise and two crosswise). You should now have 12 wedges of pineapple (about 3-inch by 1-inch each).

In a small bowl, combine honey, lemon or lime juice, and black pepper. Brush the glaze onto each slice of pineapple, coating completely.

Preheat barbecue grill. Either oil or spray the grill rack with non-stick cooking spray. Place pineapple wedges on the grill and cook approximately 4 minutes on each side (turning so that grill marks are on all sides) until the pineapple becomes fragrant and starts to dry out on the surface. NOTE: Don't overcook, or they'll turn mushy.

Remove from the grill and brush with any additional glaze one more time. Serve and enjoy!

slow cook boston pork butt for about 12 hours. season the boston butt with your favorite seasonings, all seasoning, garlic powder, onion powder etc heavily and add some olive oil to the water while slow cooking.

after it is done, take out pork and pull apart on a plate, drain the juice in the slow cooker, readd the poek and dows with Famouse Dave's bbq sauce, called devil's spit. yes, that is the name, devil's spit. gently mix then turn on low or keep warm for a few more hours to let the sauce cook into the pork.

when done, toast some onion rolls to serve it on.
