the thing about trust (and respect) is you can only earn it.
If he is forced to trust you, its not trust.
You earn it in your actions and it takes time.
to show your maturity, why don't you ask him what you could do to prove your trustworthy ness. You then have to do (or not do what he says) for long enough for him to see how mature you are.

When you start changing your behaviors/actions to PROVE to your father that you ARE becoming a RESPONSIBLE Person (instead of a 5 yr old on a temper tantrum), then the Father will begin to have TRUST that you will STAY that way, and yes, see that you ARE growing up into your Adult Responsibilities.
UNTIL that time happens, your father is NOT going to trust you ... period. TRUST is EARNED ... and the ONLY way it is EARNED is by proving that you CAN and ARE Responsible for making choices in life that result in GOOD OUTCOMES .. and not just whining, being irresponsible, being abusive to the parent, or in other ways showing that you have NO IDEA of what it means to be that close to Adulthood.

He just cares but just tell him "i'm growing up, you're going to have to stop treating me like a 5 year old sooner or later"
