The vest itself doesn't stop the officer from being stabbed, however most vests contain what is known as a shock plate, which is solid metal and reinforced with kevlar. The shock plate will stop a knife.

No. The term "bullet proof vest" is also misleading; the correct term is "body armor." There is no vest made that will protect the wearer against every type of small arms projective made.
Additionally, the vests are NOT made to deflect or prevent a puncture wound made by a knife, ice pick, or other sharp instrument.

Yes and no. A Bullet resistant vest is designed to defeat bullets. A stab resistant vest is designed to stop blade threats. There are both out there but none that do both without being very expensive and prohibitive to freedom of movement.

no unless you are wearing one with ceramic tile and only you will protected in the area of the tile perhaps some of the bullet proof vest used in England also are untended for stabbing protection but i have no idea how to get one of those, the reason for no protect agings being stabbed is the knife have a point and will cut one layer at the time like the sicor that they use to cut the Kevlar making useless agings stabbing

Supposedly, but some do not. Consider that a bullet when it hits the vest is blunt, but a knife point, or and arrowhead is sharp, and if there is enough velocity behind these two items, it can rip right through the vest.

no longer likely. Kevlar and different aramid fibers are made in layers, and there are areas in between the threads that a pointed merchandise like a knife can concievably get by. They do make "stab resistant" vests that are particularly made to be extraordinarily powerful against knife assaults, however.

Only with a trauma plate or aramid liner. Most anti-ballistic vests won't stop a knife plunged with force.
