Neither of the sentences is correct. First of all, the yolk is the yellow part of the egg. The chicken egg has a bright yellow color. You can say the egg yolk is the yellow part of an egg.

The grammatically correct sentence is the yolk of the egg is white, however both are realistically incorrect for, the yolk of an egg is actually yellow, the white part of the egg is called the egg white.
and a note to "SKAHLER": egg shells come in many colours not just brown and white. Some chickens blue coachins for example lay blue or green eggs.
