ingrediants :
3 whole boneless chicken breasts
Marinade:
2 tablespoons light soy sauce
1 tablespoon cooking wine or dry sherry
a few drops of sesame oil
2 tablespoons flour
2 tablespoons cornstarch
2 tablespoons water
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon vegetable oil
Sauce for Sesame Chicken:
1/2 cup water
1 cup chicken broth
1/8 cup vinegar
1/4 cup cornstarch
1 cup sugar
2 TB dark soy sauce
2 TB sesame oil
1 tsp chili paste, or more if desired
1 clove garlic (minced)
Other:
2 tablespoons toasted sesame seeds (see recipe directions for link to how to toast)
3 1/2 - 4 cups peanut oil for deep-frying
PREPARATION:
Toast the sesame seeds and set aside.
Cut the chicken into 1-inch cubes. Mix the marinade ingredients and marinate the chicken for 20 minutes.
To prepare the sauce: mix together all of the sauce ingredients. Pour them into a small pot and bring to a boil, stirring continuously. Turn the heat down to low and keep warm while you are deep-frying the chicken.
To deep-fry the chicken: add the marinated chicken pieces a few at a time, and deep-fry until golden brown. Drain on paper towels. Repeat with the remainder of the chicken.
Just before you are finished deep-frying, bring the sauce back up to a boil.
Place the chicken on a large platter and pour the sauce over. Sprinkle with sesame seeds. Serve the Sesame Chicken with rice.

Sesame Marinated Grilled Chicken
Makes 4 servings
Ingredients:
1 tablespoon Mirin, sweet rice cooking wine
1/2 cup white wine
1/4 cup olive oil
1/4 cup sesame oil
1/2 cup soy sauce
1 tablespoon dry mustard
1 teaspoon cracked peppercorns
1 tablespoon fresh garlic, chopped
2 scallions, chopped
3 tablespoons sesame seeds, toasted
2 tablespoons ginger, freshly grated
1 chicken, about 3-4 lbs. cut into 8 pieces
Preparation:
Briskly whisk the marinade ingredients together in a small bowl until well incorporated. In a large zip lock style bag, place both the chicken and enough of the marinade to cover. You'll have leftover marinade, store it in a glass jar under refrigeration. Marinate the chicken for 3 hours or longer in the refrigerator.
Grill the chicken over a medium-hot fire for 45-55 minutes until the juices run clear when pierced with a knife. Turn the chicken often during the cooking time to avoid burning. Baste often while grilling, with the marinade, to ensure a moist and flavorful product.

Chicken Sesame Noodles
Serves 2
100g medium eg noodles
1 tablespoon toasted sesame oil
for the dressing
2 garlic clovees
1cm piece of ginger root, peeled and grated
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar
1 tablespoon soy sauce
1 teaspoon chinese black vinegar
1 teaspoon light brown sugar
100g cooked chicken breast cut into finger sized strips
1/2 cucumber, cut lengthways into strips using a veg peeler
4 radishes sliced
2 handfuls of breansprouts
2 spring onions thinly sliced
1 tablespoon sesame seeds, briefly toasted in a hot, dry frying pan.
Cook the noodles according to the instructions on the packet, drain and refresh under cold water. Toss with the sesame oil and set aside.
Combine the dressing ingredients in a large bowl and stir in the chicken.
Toss the chicken and the dressing with the noodles and scatter over the cucumber, radishes, beansprouts, spring onions and sesame seeds.

Baked Sesame Chicken
INGREDIENTS
2 tablespoons soy sauce
1/4 cup toasted sesame seeds
2 tablespoons all-purpose flour
1/4 teaspoon salt
1 pinch ground black pepper
4 skinless, boneless chicken breast halves
2 tablespoons butter, melted
DIRECTIONS
1)Preheat oven to 400 degrees F (200 degrees C).
2)Place soy sauce in a 9x13 inch baking dish. On a piece of wax paper, mix together the sesame seeds, flour, salt and pepper. Dip the chicken pieces in the soy sauce to coat, then dredge in the sesame seed mixture. Arrange in baking dish in a single layer, then drizzle with melted butter.
3)Bake at 400 degrees F (200 degrees C) for approximately 40 minutes, or until chicken is cooked through and tender and juices run clear. Baste with drippings once during cooking time. Garnish with extra sesame seeds if desired, and serve.
