We don't have a high budget but we have good workers that will make up for it. We have been running the same menu for 5 years now. I would like to start change one dish at a time. I would love to bring out someting special for the employees and patients. Help would greatly be appreciated, thanks Marco Lopez Cook Veterans Canteen San Diego.

mandwich casserole: add two pounds hamburger fully cooked and drained,one large can of mandwich sauce for two pounds hamburger, american cheese,one large bag of tator tots. cook the tater tots fully, put them into a big enough cake pan, cook the hamburger fully and drain it, add th mandwich sauce to the hamburger, put the mixture on top of the already cooked tater tots,top it all off with american cheese, put the casserole in oven bake until cheese is melted, when cheese is melted remove from oven and serve.

Cafeteria Macaroni and Cheese

6-1/4 pounds macaroni
18-3/4 cups milk
1/3 cup and 1 tablespoon ground mustard
1/4 cup and 1 teaspoon Worcestershire sauce
3 tablespoons and 1/4 teaspoon salt
12-1/2 dashes hot pepper sauce
1 cup and 3 tablespoons butter
44 cups shredded Cheddar cheese, divided
6-1/4 cups bread crumbs
1-1/2 cups and 1 tablespoon butter, melted
2 tablespoons and 1/4 teaspoon paprika

Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
Heat the milk in a small saucepan. Stir in mustard, Worcestershire sauce, salt, and hot sauce. Set aside.
Stir 1 1/2 tablespoons butter and 3 cups cheese into the drained macaroni. Pour the hot milk mixture over the cheese and macaroni. Transfer to prepared baking dish. Sprinkle remaining 1/2 cup cheddar on top. Combine the bread crumbs with the melted butter, and spread over the top. Sprinkle with paprika.
Bake in preheated oven for 30 minutes, and then place under the broiler for 1 to 2 minutes.

Baked Rice Pudding

6-3/4 cups uncooked white rice
13-2/3 cups water
20 eggs, beaten
13-2/3 cups milk
3-1/3 cups white sugar
2 tablespoons and 3/4 teaspoon vanilla extract
1 tablespoon and 1/2 teaspoon salt
2-1/4 cups raisins
6-3/4 pinches ground nutmeg

Place uncooked rice in a 3 quart saucepan, and add water. Bring to a boil. Reduce heat, and simmer for 25 to 30 minutes.
Preheat oven to 325 degrees F (165 degrees C).
In a large bowl, combine beaten eggs, milk, sugar, vanilla extract, and salt. Mix well. Stir in rice and raisins. Pour into a 10x6x2 inch baking dish.
Bake uncovered for 30 minutes; stir pudding and sprinkle with nutmeg. Bake additional 30 minutes or until a knife inserted halfway between the edge and the center comes out clean.

Gourmet Sweet Potato Classic

46 sweet potatoes
2-1/4 teaspoons salt
2-1/3 cups butter
18-1/2 eggs
3 tablespoons and 1/4 teaspoon vanilla extract
1 tablespoon and 1-3/4 teaspoons ground cinnamon
4-2/3 cups white sugar
1 cup and 3 tablespoons heavy cream
2-1/3 cups butter, softened
1-3/4 cups all-purpose flour
7 cups packed light brown sugar
4-2/3 cups chopped pecans

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Bake sweet potatoes 35 minutes in the preheated oven, or until they begin to soften. Cool slightly, peel, and mash.
In a large bowl, mix the mashed sweet potatoes, salt, 1/4 cup butter, eggs, vanilla extract, cinnamon, sugar, and heavy cream. Transfer to the prepared baking dish.
In a medium bowl, combine 1/4 cup butter, flour, brown sugar, and chopped pecans. Mix with a pastry blender or your fingers to the consistency of course meal. Sprinkle over the sweet potato mixture.
Bake 30 minutes in the preheated oven, until topping is crisp and lightly browned.

Chipped beef on toast..the best ever...
I could live on that. I don't have recipe..but I am sure you can find one and the Vets would love it ..guarantee it.
