Deep Fried Shrimp Balls, Shanghai Style
1 lb shrimp, peeled and deveined
2 egg whites
3 ounces blanched fatty bacon
1 tablespoon tapioca starch
1 teaspoon salt
1/8 teaspoon white pepper
1 tablespoon rice wine
1/2 inch fresh gingerroot
peanut oil
szechuan peppercorns
coarse salt
Chop shrimp into fine paste, or use food processor.
Beat egg whites until foamy, then add the bacon and beat 2 minutes more.
Add shrimp paste tapioca starch, 1 tsp.
salt, white pepper, and wine.
Squeeze ginger in garlic press, pouring juice into mixture.
Mix all ingredients well.
Heat a wok until very hot.
Add 2 cups peanut oil and lower heat to medium.
Dip a measuring tablespoon in cold water, then use it to spoon mixture into a ball (cold water helps prevent sticking).
Drop ball carefully into hot oil.
Fry each ball about 2 minutes or until they float and become fluffy.
Turn balls to cook evenly.
Do not overcook.
Drain on paper-toweling.
Serve with Peppercorn-salt dip, made by mixing 1/4 cup coarse salt with 2 Tbsp.
Szechuan peppercorns.

Hungarian Angel Wing Fry Cookies (Csoroge)
3 large egg yolks
1 tablespoon sour cream
1 tablespoon granulated sugar
1 tablespoon rum or whiskey
1 pinch salt
1 1/2 cups all-purpose flour, sifted
Place in the center of a bread board one cup of flour. Make a dent or well in the center. Add the whole yolks, sour cream, sugar, rum and salt. With a fork mix until the liquids are well combined.
Gradually work into the flour. The dough should be of the consistency of a noodle dough. Knead for a few minutes to make the dough smooth.
Split the dough into 2 portions. On a lightly floured board roll out each section until paper thin.
If you have a pie crimping wheel, use it to cut the dough into squares of 3 1/2-inches or a rectangle of 3 1/2 x 2 1/2-inches. They will have beautiful serrated edges.
With a paring knife make three or four gashes about 2 to 2 1/2-inches evenly spaced.
Fry in a deep fat (Lard preferred, Crisco OK) until golden brown.
Drain on paper towel.
Sprinkle with sifted confectioners sugar.

I know it sounds kind of boring, but fish sticks are awesome in the deep fryer.
You could deep fry a Snickers- dip the Snickers in some flour, then make some pancake batter and dip the Snickers in the batter. Fry until light golden brown. Wait a few minutes before cutting into it though.

Here are a few really good and different ones- you can deep fry almost anything and the corn dog recipe below includes many variations-enjoy! Best Superbowl Wings buy Chicken wings and cut at the joint put enough flour and seasoning salt in a bag to coat the wings, shake in the flour mixture deep fry ( make sure the oil is preheated and very hot) drain wings on paper towels mix 1 bottle frank's hot sauce and 1 stick melted butter in a large bowl. toss wings in sauce mix. serve with blue cheese or ranch dressing and celery sticks. Funnel Cakes 1 cup water 3/4 stick butter (6 tablespoons) 1 tablespoon sugar 1/8 teaspoon salt 1 cup flour 1 cup eggs, about 4 large eggs and 2 whites Vegetable oil, for frying Powdered sugar, for topping Boil water, butter, sugar, and salt together in a saucepan. Add flour and work it in until it is all incorporated and dough forms a ball. Transfer mixture to the bowl of a standing mixer and let cool for 3 to 4 minutes. With mixer lowest speed, add eggs, 1 at a time, making sure the first egg is completely incorporated before continuing. Once all eggs have been added and mixture is smooth, put dough in a piping bag fitted with a number 12 tip- or a disposable catsup/condiment bottle, the kind with a narrow tip. Pipe dough into oil, making a free-form lattice pattern; cook until browned, flipping once. Remove cake from oil, drain on paper towels, and top with powdered sugar. Continue until all of the batter is used. Corn Dogs and Variations Batter: Vegetable oil, for frying 1 cup all-purpose flour, plus more for coating 1 cup yellow cornmeal 2 tablespoons sugar 1 teaspoon baking powder 1 large egg 1/2 cup milk Variations: Gherkins Baby corn Shrimp, peeled and deveined Mushrooms Apple slices Pineapple chunks Hard-boiled eggs Special Equipment: Long wooden skewers Heat the oil in a deep, heavy pan or deep-fat fryer to 350 degrees F. Whisk the dry ingredients together. Add the egg and half the milk and whisk well to combine. Add more milk as needed until the batter is thick but still pourable. Stick whatever ingredients you decide to use onto long skewers. Use your imagination to find other interesting "variations." Coat the ingredients in flour and then dip into the batter. Make sure to get it completely coated. Immediately and carefully, lower it into the hot oil. Fry, in batches, until they are light brown, about 3 minutes. Let drain on paper towels and serve while still warm.

Mozzarella cigars. Wrap 1/4" sticks in won-ton wraps. Be sure to seal them well so you don't lose your cheese. This was an appetizer in a restaurant I worked in a long time ago.

Cheese! (I'm from Wisconsin)
Just don't leave breaded cheese curds in the basket until they float like other foods. You have to time them otherwise the cheese melts into the greese and it's an inedible mess.

chicken wings!! Dredge them in seasoned flour and fry away!! Deep fried veggies are good too, such as mushrooms,cauliflower, eggplant, zucchini... I'm not sure how to do it, but deep fried cheese is yummy!! Enjoy your new toy!
