I know that an acre of land is 200X200 but could someone explain how irregular parcels are measured to get total acreage?

Your 200x200 is an approximation but not accurate. An acre is 43,560 square feet regardless of the shape - it doesn't have to be square.

If you have an irregular shaped piece of land, the way the area is found is by breaking the shape down into squares, triangles and arcs, measuring the angles and lengths in those shapes.

You have to have an accurate and to scale map of the property. Using right angles (as best you can) divide the property into squares and rectangles and the remaining bits into triangles. Using basic area calculations for each piece, calculate area. Add all th ebits together then divide the total by the number of square feet in an acre.

OR if you have a friend who has autocad access, scan the map to scale and just have them calculate it on the screen.
