Think about it. The Genesis accounts were written by human beings. The benefit of thinking that you were "crafted" in the image of an all powerful being is a great ego boost.

These people lived in a confusing world, but one that they were beginning to have greater control over. They could teach one another across generations, because unlike the animals, human beings had speech. And they had told stories throughout un-recorded human history until written language developed.

The benefits of humans seeing themselves as just a bit lower than God are greater self-esteem, a sense of specialness in the eyes of your imagined creator, and a sense of destiny directed at dominating your environment. If they saw themselves accurately, as just another species of animal (albeit a cognitively capable species), the responsibility toward caring for the entire environment would have been greater, but the drive toward reaching the top of the heirarchy would have been tempered.

Depends on what you believe.
I personally think that, although God has a distinct look, we create her to appear as someone we trust and love deeply, be it family, friend or even stars.
