Warm muffins out of the oven are much warmer then refrigerated ones. If your putting them in the fridge after they are baked thats your problem. I like Jiffy Muffin mix its very easy!!
Just dump the box ingredients in with one egg, and 1/3 c. milk mix and pour. bake for 13 mins. and let cool then enjoy. Don't overbake!

Muffins are one of the easiest things to bake. You may be overbaking. Or you may have a not-so-great recipe.
