Somes times, you suddenly meet an ex-girlfriend, or a classmate (girl) you haven't seen since years ago. You will feel surprised, and would like to see her again, to speak about what you both did during the last years.
But, do you think that you have to speak about it to your partner? Or just not telling her the truth!
What do you think about it?

I think dating anybody while you're still with someone else would cause a problem, because there's another word for that: cheating. Unless by 'dating' you just mean 'seeing and talking', then that's fine. It could cause problems with your current partner, though, because the assumption is you left your ex for somebody better, which eventually became your current partner. If you revert to paying attention to your ex, then your current partner could come to believe that you want your ex back. On the other hand, if your current partner is understanding, and aware that just because you're talking to someone else doesn't mean you want a breakup, then there shouldn't be a problem.

just tell your partner that you met up with an old friend you don't need to say it's an ex unless you want to because if you are happy with this new partner then there is no problem meeting an old ex

If you want to DATE the ex-girlfriend, break up with your partner. If you just want to hang out and catch up, I don't think it is any big deal, but it also should be something you have no reason to hide either.
