My two children have just asked to make some cookies and I cannot find my usual recipe anywhere!! Has anyone got a simple cookie recipe that we could use?

Try this Delicious recipe:
100g/4oz butter or margarine
50g/2oz caster sugar
50g/2oz light brown sugar
1tsp. vanilla essence
1 medium egg, lightly beaten
225g/8oz self raising flower.
Why not try these variations to add more tasty fun:
DOUBLE CHOCOLATE CHIP COOKIES:
Replace 25g/1oz flour with cocoa and add 75g/3oz each chopped white & plain chocolate (or 100g chocolate chips)
PEANUT AND RASIN COOKIES:
Add 50g/2oz each salted peanuts and raisins and 75g/3oz chopped milk chocolate.
CHERRY AND COCONUT COOKIES:
Add 75g/3oz each chopped ready-to-eat dried apricots and glazed cherries and 50g/2oz shredded coconut.

This is a great kid-friendly recipe and best of all it is made with ingredients you probably already have in your kitchen...

PEANUT BUTTER COOKIES

Ingredients:
• 1/2 C Crisco
• 1/2 C Margarine
• 1 C brown Sugar
• 1 C white Sugar
• 1 tsp Vanilla
• 2 eggs
• 1 C peanut butter
• 3 C Flour
• 2 tsp. Soda
• 1/2 tsp Salt

Cream shortenings and add eggs, vanilla, and peanut butter. Mix dry ingredients and add to creamed mixture. Make into balls, place on cookie sheet, and flatten with a fork. Bake 350 F for 10 Minutes.

Here's one a friend gave me. After trying it they were the best homemade cookies I'd ever made!! :D Happy Cooking

Ingredients
115g flour
1/2 tsp bicarb of soda
1/4 tsp baking powder
1/4 tsp salt
115g butter
115g caster sugar
100g light brown sugar
1 egg
Vanilla Essence
85g porridge oats
170g choc chips

Pre-heat the oven to 180 degrees celsius.

Grease and line a baking tray

Cream the butter and both sugars together

Beat in the egg and vanilla essence

Sieve the flour, bicarb,baking powder and salt. Add to the mixture with the oats and mix well

Add chocolate chips

Drop dessert spoonfuls of mixture onto a baking sheet

Flatten them slightly with the back of a wet fork

Bake for 12-15 mins until golden

Leave on sheet for 5 mins to cool and then move onto a rack

2 cups granulated sugar
2 eggs, well beaten
2 tablespoons milk
1 teaspoon vanilla extract
3 cups flour
2 teaspoons baking powder
1/2 teaspoon salt

PREPARATION:
Cream butter; beat in sugar gradually. Add eggs, milk, and vanilla extract; stir to blend. Combine and sift flour, baking powder, and salt; add gradually to creamed mixture, mixing thoroughly. Cover and refrigerate for 4 hours or overnight.

Shape dough into 3/4-inch balls. Place 2" apart on greased baking sheet. Flatten with bottom of glass that's been greased and dipped in granulated sugar. Bake at 375° for 8-10 minutes or until edges are lightly browned. Remove to racks immediately to cool.

Chewy Brownie Cookie
These cookies are double chocolatey with cococa powder and chocolate pieces.

• 2/3 cup shortening
• 1-1/2 cups firmly packed light brown sugar
• 1 Tbsp water
• 1 tsp vanilla
• 2 eggs
• 1-1/2 cups all-purpose flour
• 1/3 unsweetened baking cocoa
• 1/4 tsp baking soda
• 1/2 tsp salt
• 2 cups semi-sweet chocolate chips (12 oz. pkg.)
Method:
1. Heat oven to 375 degrees. 2. Combine shortening, light brown sugar, water and vanilla in a large mixing bowl. 3. Beat at medium speed of electric mixer until well blended. Beat eggs into creamed mixture. 4. Combine flour, cocoa, baking soda and salt. Mix into creamed mixture at low speed until just blended. 5. Stir in chocolate chips. 6. Drop rounded measuring tablespoonfuls 2 inches apart onto ungreased baking sheet. 7. Bake one baking sheet at a time at 375 degrees for 7-9 minutes, or until cookies are set. Cookies will appear soft and moist - DO NOT OVERBAKE. 8. Cool on baking sheet 2 minutes. Place sheets of foil on coutertop. Remove cookies to foil to cool completely.

Number of servings: 3 Dozen Cookies

1. Follow the instructions on the label of the jello packet to make jello
2. Scoop some ice cream in a ice cream bowl and add the prepared jello on the top
