I made scotch pancakes this morning but i made far to much and theres loads of mixture left still. What can i do with it all?

Oil a muffin pan. To your pancake mixture, add any fresh, or frozen (defrost it first, squeezing out all the juice) fruits, or sliced cooked sausage links. Fill the cups of the muffin pan 1/2 way full. Bake at 350 degrees for about 8 to 10 minutes. Keep an eye on them, as ovens vary. Let them cool, for about 10 minutes, and pop, or scoop them out of the pan. You can split them in half, and add butter and syrup to them, or even jam, or jelly. They are little pancake muffins. Yum. Have some scrambled eggs, and hash browns with them! It will look and taste great. Enjoy your food, never be afraid of it! LOL

Put the remaining mixture in an air tight container and freeze it. It freezes extremely well the same as Yorkshire pudding mix freezes well.
When you come to use it again just either defrost at room temperature for an hour or so or defrost in the microwave. Whisk well when defrosted and away you go.

not an answer but ive got a thing for scotch pancackes at the moment but they have to be burnt,god knows why burnt but ther ya r ,sorry just had to mention that :)

Milk it down a little just alittle and make a toad in the hole !

heat oil in roasting tin pour in the batter add sausages there u go quick toad in the hole enjoy !
