I think sauces complement the foods they're paired with. They play a role meant to bring out the fullest flavor of the food they're paired with, but they're not meant to overpower the original natural flavor of the food. I guess sauces are like wine. You have a specific wine for a specific food. Likewise, you have a specific sauce for a specific food. Like ketchup and fries or fried chicken and gravy. Sauces are there to make the meal complete. Without them, well, a hotdog's just not a typical hotdog without mustard, sweet pickle relish, and ketchup, right?

wot like prawn crackers and chilli dipping sauce
all they do is liven up the meal making it less plain and boring
and they also give companies money!!!!!!

Add tastes to the foods.
Steaks without sauce is not very tasty.
Salad without dressing is like chewing grass.
Fries without ketchup is not complete.

to change the taste , lamb is fairly plain, with mint jelly it gets a bit of sweetness and tang, with curry its totally different. all meats are like that, and even some veggies get the sauce treatment, like creamed peas and onions, it changes the texture as well as the taste and gives variety to meals.
