Tilapia Fillets with Balsamic Reduction
Makes 4 servings
Ingredients:
4 5- to 7- ounce fresh tilapia fillets
salt and pepper
2 tablespoons olive oil
1/2 tablespoon flour
Sauce:
1 cup sugar
1 cup balsamic vinegar
Preparation:
Place the sugar in a hot frying pan and caramelize, but do not burn it. Add the balsamic vinegar and a pinch of black pepper. The sugar may get hard, but as the vinegar boils, it will melt again. Boil for about 10 minutes. If the sauce is too thick, add vinegar until desired consistency is reached. Set aside.
Combine the salt, pepper and flour and dredge each side of the fillets. Heat a large frying pan over medium high heat. When the pan is hot, add the olive oil and let it get hot. Add the fillets and brown on both sides, turning only once. Cook the fillets until they are golden brown, about 3 minutes per side. Remove to a plate and drizzle the balsamic sauce over the fillets.

Golden Tilapia

1/3 teaspoon peppercorns
1 clove
2 teaspoons sugar
3 tablespoons soy sauce
2 tablespoons white rum
1/2 teaspoon grated lemon rind
1 tablespoon lemon juice
1 teaspoon ground ginger
1 teaspoon garlic powder
1 pound whole tilapia, filleted
Salt and freshly ground black pepper
2 tablespoons olive or peanut oil
1 1/2 cups julienned mixed vegetables, such as carrots, zucchini, yellow squash, bell peppers
In a dry skillet, toast the peppercorn and clove over medium heat until puffs of smoke begin to appear, about 1 minute. Transfer to a mortar and crush roughly.
In a small saucepan, simmer sugar, soy sauce, rum, lemon zest, and lemon juice over medium heat. Add the peppercorn/clove mixture, ginger, and garlic powder, and reduce by half.
Remove from heat, strain and let cool.
Place the fish fillets in the cooled marinade and let sit for 20 minutes.
Preheat the oven to 375 degrees F.
Heat a skillet on medium high heat. Remove the fish from the marinade. Season the fillet with salt and pepper. Place the marinade in a small saucepan, bring to a boil, and remove from the heat. Add the oil to the skillet, and saute the fillets for 2 minutes on each side. Divide the julienned vegetables into two piles on a baking pan. Place fillets on the vegetable beds and finish in the oven for 5 to 7 minutes or until done.
Brush marinade on finished fish. Serve with vegetables as soon as possible.

I really like Tilapia steamed in parchment paper. Take a large(18x24")piece of parchment paper(not wax paper) and fold it in half. Cut it in the shape of a half heart with the fold being the center line. unfold the paper and place your tilapia filet on one half. Season it with salt and pepper and whatever you'd like(citrus fruit slices are nice, but so is a little fresh chopped ginger, fresh dill or even some chopped fennel bulb)
Then, fold the other half back over and gently crimp the edge starting at the bottom until you get to the top. Before you seal it completely, pour in a half ounce of orange or lemon juice and an ounce of good white wine(whatever you are drinking) then seal it up.
Place the packet on a sheetpan and bake in a preheated 350*F oven for about 20 minutes. After 20 you can check it by unfolding the top part of the packet but it should be done. Steamed to perfection, tender and tasty. It can be served in the packet too, just place it on a plate and instruct your diner(s) to cut it open right in the middle.
Serve it with some nice steamed veggies and you will have a delicious and healthy dinner!

Tilapia is very versatile. It is easily prepared in a number of ways. You may really enjoy foil baking it. This is super easy and you can taylor the recipe to your tastes. Start with some vegetables you like. I recommend zucchini, red onion, plum tomato and red bell pepper. Season your Tilapia fillets with salt and black pepper and lay on foil sheets. Pre-heat your oven to 325. Slice (thin) the red onion and bell pepper and place on the fish. Dice the zucchini and tomato 1/4" dice is ideal. Drizzle with extra virgin olive oil and sprinkle with salt and pepper. Add a pat of butter and seal the foil to make a pouch. Bake sealed for 12-18 minutes depending on the size of the fillets. When finished, remove from oven and (using tongs) open the foil pouch. This is nicely served over rice, couscous or angel hair pasta. The moisture from the veggies, the olive oil and butter combine to form a delicious broth.

Pecan-Crusted Tilapia
Serving Size : 4
1/2 cup dry breadcrumbs
2 tablespoons finely chopped pecans
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 cup low-fat buttermilk
1/2 teaspoon hot sauce
3 tablespoons all-purpose flour
4 (6-ounce) tilapia or snapper fillets
1 tablespoon vegetable oil -- divided
4 lemon wedges
Combine first 5 ingredients in a shallow dish. Combine buttermilk and hot sauce in a medium bowl; place flour in a shallow dish. Dredge 1 fillet in flour. Dip in buttermilk mixture; dredge in breadcrumb mixture. Repeat procedure with remaining fillets, flour, buttermilk mixture, and breadcrumb mixture.
Heat 11/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add 2 fillets; cook 3 minutes on each side or until fish flakes easily when tested with a fork. Repeat procedure with remaining oil and fillets. Serve with lemon wedges.

Tilapia Lemon Parmesan
2 1/2 pounds tilapia fillets
4 teaspoons butter, softened
2 teaspoons fresh lemon juice
Sauce:
1 cup mayonnaise
2 tablespoons fresh lemon juice
1/2 cup grated Parmesan cheese
Garnish:
2 lemons, sliced
fresh parsley
Mix sauce ingredients in a small bowl. Set aside. Rinse the tilapia fillets in cold water and drain thoroughly. Top with butter or margarine and lemon juice. Broil about 4 inches from the source of heat for approximately 5 to 6 minutes or until the fish is opaque and flakes easily when tested with a fork.
Top each portion with 1 to 2 tablespoons of sauce; broil 2 to 3 minutes or until sauce puffs and turns golden brown. Place fillets on serving plate; garnish with lemon slices and fresh parsley.

Easy recipe:
Chopped garlic, onion, tomatoes and sliced lemon. Put on top of Tilapia (fillet) on a broiling pan, Sprinkle some black pepper, salt and a little olive oil. Then broil it for 350F for 45 minutes and you have Broiled Tilapia.
