I like mine deep fried in beer batter. I cup of beer to about a cup of flour and I add a couple tablespoons Tony Cachere's seasoning to it. I sprinkle my fish with flour to coat it and that helps the batter to stick. I fry it in hot 350 degrees FRESH oil.

Hi: Here's something to try - but it is not fried fish, it is best baked. 1 egg beaten 2 Tbsp milk Bread crumbs Salt and pepper (added to bread crumbs - a couple of shakes of each) vegetable oil Fish fillet Beat egg and milk together. Dip fish fillet in the mix and roll in the breadcrumb mix to coat. Refrigerate. If you want a thicker coating, repeat and refrigerate until the crust sticks. Spread vegetable oil onto a cookie sheet or other cooking pan. Heat oven to 375 and put fish on the pan, cook about 10 mins on one side then gently flip and cook the other side for about 5-8 mins, adding a bit more oil if needed. Fish is done when it flakes when you pull on it with a fork.

This is how my nana made it. She used boneless filets of fish.
Wash the raw fish in cold water, pat dry.
Take two plates and a bowl. Plate one- flour. Bowl in middle- eggs, beaten , with a little water. Plate two-bread crumbs with calt, pepper- any spice you like. Paprika or chili powder is a nice kicks, but any spices will do.
Place the fish on the flour plate, dip it a bit then flip it over to coat the other side. Then toss into the egg bowl, flip over to coat the other side. Then dip into the bread crumbs to coat.
Place on a clean plate while you heat up the pan, preferably an iron skillet. Put a little olive oil in th epan. When it's hot, toss the fish in. Cook abour 6-7 minutes on each side. When it's flaky all the way through, it's done.
Use extra virgin olive oil and egg beaters to reduce cholesterol. It's less cholesterol than deep-fried fish anyway.

u can cook fish pretty well however u want, from the BBQ to the deep fryer. but my best fish recipe would be a simple one, just get any fish and u just put it in a frying pan with lost of lemon juice (and u can throw in some lemon basil if u have some) and just cook it till its all good then serve it with some more lemon juice.

any type of white fish you like in a casserole dish, lemon juice from 1/2 lemon over the top and 1 Tbls butter (not margarine) for each lb of fish. bake at 350 degrees til fish is opaque. sprinkle with lemon pepper and serve

BAKED STUFFED FISH
2 lbs. fish, 1 cup flour, 1 egg beaten,2 tbsp.bread crumbs
allow about 2 tbsp.of stuffing for each fish. you may used a combination of bread crumbs, fresh herbs, margarine,lime juice,pepper,tomato,and salt. for a large fish, cut open the back of the fish and remove the bone and fill with stuffing. season fish and dip in flour coat with egg and then bread crumbs place in buttered baking dish,and bake at 350+f for about 20 minutes basting occasionally garnish and serve

The best way is to get some nice, fresh fellets in cold water.

Then batter them up in a cornbread and spice mixture.

Fry in a skillet until they turn brown, not brown all over, but just crispy.

Spice them up and salt 'em.

place some sliced onion, dill, butter and lemon juice in the cavity, place in foil spread some butter over the skin, add a slug of white wine, make a parcel with the foil, but don't wrap to tight, then bake in oven till cooked. If you are using fillets just place them on the onion etc.
