Add chopped onion and a little minced garlic to a can or jar of Great Northern beans. Heat through, and serve with corn muffins.
Make sloppy joes from soy crumbles and your favorite barbecue sauce. Serve over toast.
Top a prepared Bocca burger with some guacamole, chopped onion and tomato, and a little sour cream.
Prepare a green salad with your favorite ingredients, then top with heated mock chicken chunks.
There are also already prepared vegetarian soups. Heat up a can of your favorite kind and add a grilled cheese sandwich or a small salad.

I don't know if this is quick and easy, depends on how fast you are with a knife.
Take about two pounds of finely ground cornmeal (or masa if you have it) and mix in about two cups of corn oil. Now add:
* A couple of small diced potatoes
* Some capers
* Chopped red bell peppers
* Sliced olives
* Diced onions
* Crushed or finely diced garlic
* A handful or two of corn kernels
* A tablespoon of whole cumin seeds (toast them to bring out the flavour)
* A couple tablespoons of chili powder
* A couple tablespoons of paprika
* A bit of salt if you aren't going to use stock
Now add stock (or water), no more than eight cups. Start with four, then keep adding. More stock will make for a smoother texture, but a messier batter.
Cut some banana leaves into 12" lengths and drop a half cup or so of batter onto the leaf segment. Less batter is easier to wrap and handle, so maybe try only about 1/4 cup if you aren't that great at wrapping these, yet. Fold one side over the batter in the middle (perpendicular to the veins in the leaf, if you fold with the lines, they'll split and batter will squish out). Fold the ends over the centre now, then roll the tamale the rest of the way. It's like rolling spring rolls. Line them up in a steamer and steam for half an hour.
These keep forever in the freezer for future reheating, too. As complicated as this sounds, actual prep time is only about fifteen minutes, unless you're one of those people who takes five minutes to chop an onion.

Failing that, try a nice avocado sandwich. For this you will need:
* A good firm sandwich bread
* Mayonnaise (I have a recipe for this too which is way cheaper to make than a jar of Nayonaisse is to buy, if you like)
* An avocado
* Some small leafy type sprouts (i.e. alfalfa or clover, start growing these about four to six days in advance)
* A sliced tomato
* An thinly sliced onion (preferably red), separated into rings
Slice the avocado in half, one sandwich requires one half. Run a spreading knife vertically many times through the flesh of the avocado to make tiny, slightly mashed, slivers. It spreads better this way.
Layer sandwich as follows:
1. Bread with mayo
3. Avocado (when you bite the sandwich, it must be avocado side down, as well, it really makes all the difference in the world)
4: Sprouts (they stick to the avocado)
5: Tomato (never directly next to the bread)
6: Onion
7: Mayo on another piece of bread
* Optional: sprinkle sandwich with oregano and/or salt before putting the last slice of bread on
I know a great number of sandwich recipes, but I must say, this one never fails to please a customer. And the best part is that it only takes five minutes and costs less than 50 cents to make.

If you mean vegetarian, not *vegan*.. then you'll love this;
2 big slices of sourdoough bread, very lightly toasted and set aside to cool.
After they are cool, add Mayonaise and salt and black pepper.
Then slice a tomato about 1/4 inch thick and put it on the bread.
Simple yummy sandwich.
Eat some minute rice brown rice with it!

Pita pocket stuffed with what ever you want! Cheese, veggie deli slices, lettuce, tomatoes, sprouts, mustard, fried tofu. The list is endless.
Couple that with a cup of tomato soup and you have a lovely, filling lunch.
I also love Wasa crackers (like the crunch). I will put a skiff of mayo, then sliced tomatoes, and a slice of cheese. Mmmm.
