Include music, movement, excitement in your voice, and by all means don't expect them to sit down!

Learning should be fun and exciting!
I taught preschool for three years and I've used the same techniques with my daughter (who is 5) and her friends. If I want them to listen, I drop my voice to a whisper and pretend I have a secret to tell them. I start with "You want to know something..." and they all will stop what they are doing and listen attentively. But don't use this all the time or they will get bored.
Sometimes when I was right in the middle of a lesson that wasn't going well, I just stopped and got the children to stand and stretch for a few minutes, or I told them to "get all the wiggles out" and move their bodies in a silly or crazy way. Then they were more apt to pay attention to the rest of the lesson.

Let them sing and use motions. It doesn't matter what the subject is, look on the internet for songs related to it. In my preschool, we were learning about reptiles, so we sang about monkeys and aligators. They loved it! Really, anything you can get goofy on and be loose about, any preschool kids will love it!

Being very positive and bringing out the best in kids, they love to listen to music and do hand motions. My three year old niece, who is very smart always wants to listen to kids music. Also, Kids Song has a lot of very good kid's music dvd's, which are fun and affordable, less then $5.00. You can buy them at Wal-Mart. Best Wishes and Happy Teaching!

Have a period of time say 2 minutes where you have to get up and move to the music. You could use paper cups for counting, make shapes with cereal (cherrios, kicks, rice chex..etc)
Let them be messy! Tell parents to bring to school an old dress shirt that they can wear for the project. "Call it a messy dressup!"

Let them decide where the lesson goes. Get them active and involved. Make them want to learn.

Teacher has to talk less...CHildren have to work more with their HANDS and INTERACTIONs with Peers...not with the Teacher.
