I'm working on some genealogy research and have a few lines that go back to Poland, Germany, Prussia and Slovak and I have no clue if the had census records?? Any info would be helpful!

You may want to start with this list of international statistical agencies from the U.S. Census (they might point you toward whatever national bureau handles each nation's census):

For Poland try: http://www.stat.gov.pl/english/index.htm

At the risk of sounding funny, the Poles did systematically collect census related data; however, the data was notoriously known for "miscounts." Much of the information is simply not reliable data. For example, I tried to research the geneology of Lec Walesa, but to no avail. The data was almost incomprehsible.
