Like the question says, I hate creamy white foods. Seriously, the only ones I'll eat are garlic Alfredo sauce, fat-free ranch dressing, and whipped cream. Maybe it's Freudian, I don't know. :)

But lots of recipes I want to make call for mayonnaise, ricotta cheese, cottage cheese, cream cheese, or sour cream. What can I substitute for these items? Please no Miracle Whip, plain yogurt, etc, because I won't touch the stuff. Oh, and I don't eat eggs either, but milk is okay.

how about a bechamel sauce??
also known as a 'white sauce'

if you like alfredo, you should like this sauce!

simple and delicious!

basically you mix up some butter and flour over a medium heat until it is bubbly and gets golden, then put in milk....thn turn down the heat nd add bay leaf and salt/ppper to taste and simmer low/slow for about 20 min. it is good with anything that calls for a creamy white sauce.

My grandma maked a baked macaroni and cheese, by boiling noodles, adding white sauce and plenty of cheese, then bake for 40 minutes until cheese is bubbly.

Ah I won't use them either! They are just gross to me. Always thought I was the only one! Anyway, If you are looking for a cheese substitute, try another cheese with a similar sharpness. With mayo and sour cream type stuff, I don't know what to tell you. Maybe try some milk with another kind of cheese melted together to make it creamy? I don't even know what to tell you except eat a lot of salad... Sorry!

Sometimes you can get away with Italian dressing in the place of mayonnaise. Depending on the recipe, you might use a grated or cubed hard cheese instead of ricotta or cottage cheese.

Mashed avocado can also be a mayonnaise substitute.

There are millions ... no billions... of recipes out there. If I were you, I simply wouldn't prepare any recipes that call for anything of a white nature. That would include lasagna, scalloped potatoes, and the list goes on.
When a recipe calls for a particular item, there's a reason. For the items that you listed, I don't have any idea what you could substitute to make the recipe taste the same.
I'd keep it simple and stick to meat, potatoes and fruits and vegetables. That way you're safe.

Sure, you can use the egg whites in a carton from the store. They are real whites so works fine. But if you do have that many yolks don't waste them. Put them in simmering water to cook and chop to add to tuna salad, mac salad, or sprinkle over a green salad. After all they are the best part of the egg, right?

some recipes need those items because of the method. be more specific, like give one recipe, it will be easier to help you substitute.
