Legally, only one. However, some scripture teaches:
The law of God both allows and provides for polygamy. Monogamy is an invention of man. The Patriarchs and Prophets of old had multiple wives; and were favored servants of God. Abraham had three wives and Jacob four. Yet, God made the sons of these marriages Patriarchs. The law of Moses provides for polygamy. In the conquest of Midian there were sixteen thousand females added for Israel to take to wife. Without polygamy, it would not have been possible to provide for them. Polygamy is provided for in the Old Testament; and is not forbidden in the New Testament.
God actually required polygamy in some instances. At the death of a brother, the other was required to marry his brother’s wife; and raise seed for his brother. “8 And Judah said unto Onan, Go in unto thy brother's wife, and marry her, and raise up seed to thy brother.” (Gen. 38) “5 If brethren dwell together, and one of them die, and have no child, the wife of the dead shall not marry without unto a stranger: her husband's brother shall go in unto her, and take her to him to wife, and perform the duty of an husband's brother unto her. 6 And it shall be, that the firstborn which she beareth shall succeed in the name of his brother which is dead, that his name be not put out of Israel .” (Deut. 25)

If you're asking about legal spouses, everyone is allowed to have one spouse (including Mormons). The Church of Jesus Christ of Latter day saints originated in the United States. Everyone in the United States is held to the same standard of one spouse per person. So they may have one wife just like everyone else. In the past some Mormons practiced Polygamy, but that was a long time ago, and it wasn't done legally. Since your question is stated in the present tense, I answered it as it stands today. one, they can have one. The old polygamy rules have been abolished by the church. The problem is many psycho offshut cults of the church of mormon have multiple wives. The church nowaday says one.

The LDS has denounced polygamy, but some offshoots of the church still practice it, and there is no limit as to how many they can have.
