just dont cook it as long next time. It was overcooked. Chicken is fine to cook in the crockpot, but just not for 8-10 hours like a beef roast.

Chicken is not made to be cooked for long times as in a crock pot, that is why it would be dry. If you are going to use chicken I would cook all the other things and then add the chicken in the last hour before serving........
Too you can cut it into smaller pieces then it might stay moist?

Chicken is easily overcooked when using a crockpot. It just doesn't do well simmering in liquid for long periods of time because it is too lean. You could keep the chicken completely submersed in liquid the entire time and it will still come out dry if it's overcooked. I would suggest using another cooking method for chicken. Save the crock pot for for meats that actually improve with a slow wet cooking process like beef and pork.

Chicken is so lean that it does not crock very well except in it's original state. Whole Chicken. You need a bit more fat to make a great crock pot meal. I have had the same problem as you, when using Chicken.
Doesn't happen with anything else. More liquid and slower?

Chicken doesn't have much in the way of any conective tissue like a roast would for say, so it wouldn't be a good choice to cook in a crock pot. Also the funny thing is wet heat dries things out quicker than a dry heat does.

You might trying searing it first and then put it in the crock pot last. There might be some recipes for crock pot chicken here. I have found a few other good ones.

Guess What? I just bought myself a crock pot and have been making all sorts of foods. Well, actually just Chili and Pot Roast. You might need to add 1/3 cup water. I love my crock pot. I wonder why I haven't bought one earlier in my life. ALSO... I forgot to mention---> You are not supposed to uncover anything you cook in a crock pot. Keep your stuff covered. Don't be messing around with it until your food is ready!

Crock pot cooking requires more liquid than usual. I love making chicken cacciatore. Just add chicken, peppers, canned tomatoes, garlic, oregano, salt and pepper, wine and chicken stock. Simmer for a few hours. Serve. Also make sure that your lid is on correctly so you don't get much evaporation.

did you make sure it had plenty of water in it? Im not a fan of crock pot cooking. I don't trust that slow cooking and getting to the proper temperature in the right amount of time.
