It's "en garde." And usually, "sword fighting" is more appropriately referred to as "fencing."

Sword Fencing Terms

In a formal duel, the east and the west have different ways to get things started. In either case, there is a formal beginning - before that formality, there is no fighting, after that formality, game on.

Its the difference between a duel and an attack. With an attack, who cares about the concept of fairness. In a duel, fairness is key as its a contest of skill. If someone makes a suprise attack when the other would not have done so, its not a contest of skill, but an effort to win at all costs. Neither being right or wrong, but certainly very different.

In the west, fencers say En Guard - meaning on guard or get ready, prepare yourself - unsheathe your sword and enter a guarded position so we may begin.

In the east, its a bow, a formal drawing of swords, guarded position is taken and the contest can commence.

I would say in a sword FIGHT the formalities are not needed. In a formal sword DUEL, they are imperative - its considered dishonorable to forgo the formalities in a DUEL.
