they are not the cleanest things and there are far better options

I can't think of any perfectly good reasons why you shouldn't eat a roach, so go ahead!

If you wanna try an experiment, bite it's head off.
It should live for about 8 days after this until it starves to death because it has no mouth! (This is a fact!)
