Well if you use the true Italian Mortadella version and not the American version I would take the Bologan and green beans due to the price and for health reasons, and to it all depends on the meal and if I am working in the field or having walking in the woods, or eating out.
and here is why.
Bologna sausage is an American version of the Italian mortadella (a finely hashed/ground pork sausage with lard pieces). The American version can alternatively be made out of chicken, turkey, beef, pork, or soybeans. It is commonly called bologna and often pronounced by hypercorrection) and/or spelled baloney. The "baloney" pronunciation can be used to mean "lies" and/or to express disbelief .
Bologna is also popular breakfast food in Newfoundland, served fried as a substitute to ham slices. It is also sometimes barbecued as well. In either case, it is referred to as "Newfie Steak."
Soft or cooked Salami (Soppressata or Mortadella) should be sliced thin to get the most flavor and aroma. Hard or dry aged Salami should be cut thick; in fact it should be thick enough to be able to stand on its edge. Any type of salami is great as an appetizer since it is bold enough to be served alone or with other ingredients. Good hard cheeses like pecorino go well with a number of spicy dry cured salami. Green apples and pomegranates or fresh mozzarella complement softer and more delicate varieties like soppressata.
All types of salame can lend a unique, savory dimension to any tomato based pasta sauce. Salami also excels as a topping or a stuffing to main dishes way beyond pizza and calzones. However thousands of backpackers (including myself) and other travelers to Italy have discovered salami to be the perfect picnic food. The Italian hunters may have had the right idea after all. Taking their portable salamini, some cheese, olives and wine into the woods to have lunch under the trees
Salumi (a word covering a wide range of salt-cured, air-dried and smoked preparations) is the most common way meat is included in an Italian meal. Most salumi is made from pork in two generic types. The first covers minced meats known as insaccati (encased in protective coverings or sausages), such as salame, cotechino, soppressata, luganiga, zampone and mortadella. The second covers whole cuts, such as prosciutto (ham), spalla (shoulder), capocollo (neck), pancetta (belly, sometimes smoked as bacon), culatello (an aged filet of rump) and speck (smoked flank). Sources of salumi range beyond pork to beef (for bresaola), goose, goat, boar, chamois, turkey and more.
Veal has always been more popular than beef in much of Italy, not only because of its more delicate flavor and greater tenderness but also because it was often more readily available. To obtain veal of the finest quality calves are slaughtered while still suckling. Since World War II, beef has played an increasingly important role in the Italian diet. Beef is often imported, largely from other European countries, although Italy boasts some of the finest meat cattle in the world, particularly the Chianina breed, which originated and still flourishes in the central part of Italy and especially Tuscany.
