Because, as you said yourself, it slooooows down the metabolism. Your body thinks it is in 'starvation' mode and wants to make sure you survive the 'famine'. Sure you will lose weight, but it will take quite a while and most people, especially those who enjoy food and love to eat it, have their limits. Go off and then go crazy....then your body thinks it is 'feast mode' and 'saves' it all to fat. This is the basic theory of losing weight, why it works best to reduce intake, lose slowly, but consistently.

Not only does it initially slow down your metabolism, but your body treats it as starvation, so that when you do eat a little or a lot after starvation, it stores it as fat for the next "starvation" you attempt to put your body through. You are better to eat smaller meals of healthy items, so that you don't feel hungry and keep your metabolism up, than to starve yourself or trick your body into thinking you're starving it and put the initial weight lost back on plus the starvation rations your body will attempt to store. That's why it's also imperative for long term weight loss to come off slowly, so your body doesn't treat the loss as starvation.

once you stop eating your body will simply feel light and you will think you are loosing wieght but then the moment you start to eat even if its in moderation every thing comes rushing back. it is terrible.
exercise is the best. i just don't know how those celebs get to slim up but i thnik it has to be something they do over a very long time so that for us to notice the wieght lost, they must have started about 6 to 8 months ago.

Because you'd be miserable from lack of food, and although you'd lose the weight, once you started eating again you'd probably gain it back, plus when you lose weight by starving you lose bone density vs. losing it from exercise where you keep the bone density
