Any ideas for tomato relish?

What goes well with tomato relish? Recipes please? I only know that it goes well with cheese and crackers. Anything else? I dnt want a jar of it to go to waste... :P

Try it on a sandwich with cheese, or a ham and salad sandwich. My husband eats it on toast with nothing else.

Why not use it in quesadillas (sp) or with hot dogs or next to or in your meatloaf mixture. Spanish rice? I guess it would depend what exactly is in your relish.....?? with cornbread perhaps even? Just some of my thoughts. Hope it helped.
