You can freeze and reuse pancetta, but it sometimes takes a longer time than most meats to defrost when you want to reuse it. You want to make sure there's an airtight plastic seal (plastic wrap or zipper bags) if you're going to freeze it- don't leave it frozen for longer than a few weeks because it is very suceptible to freezer burn. When you're ready to use it, allow 8-12 hours for it to defrost. If you use it often, it might be wiser to store in the refrigerator- as you would with bacon.

Yes, you can freeze pancetta, but it has to be perfectly wrapped, since the high amount of fat in it won't let it be completely frozen. The frozen life of pancetta is 3 months.

Yes. Wrap it tightly in plastic wrap, then foil. Date it on the outside. You're good for a couple of months.

not sure..try it! I would wrap it in plastic wrap tightly and then put it in a freezer bag to keep it from getting freezer burned.
