My mom always said that the best banana bread was made from very ripe bananas, ones that were brown and mushy; is this true?

yeah. the fruit has broken down more (into sugar). plus, it's a good way to not waste those bananas when they get overly ripe. bananas are only good for about a day, you know?

Yes, but if they are too far gone the bananas, and the bread, will have an odd taste. I like to use bananas that are about half brown, and not too mushy. They seem to be at their sweetest then.

Another little hint - if you come up short when measuring out your mashed bananas, make up the difference with sour cream. I tried this once, and my son said it was the best banana bread I had ever made.

I agree with the others and you're not wasting food by using the ripe bananas. Also, when I make banana bread that calls for nuts I substitute grapenut cereal (I always have that in the pantry). It's sure less expensive than buying walnuts etc and I'm not sure about this but I've never heard of anyone being allergic to grapenuts but there are a lot of people who can't eat nuts.

I'm not sure about best, but that's what i use because when they get that brown they're not good for much other than cooking. However, i think any ripe banana would be good. the flavor of bananas is more nuanced and complex when they are all yellow w/ no spots. i think they would make good bread also.

yes- bananas that have been blackened work great as well- my family iis always making banana bread, and they usually let the bananas blacken in the freezer for at least two weeks before use. Fresh bananas seem to give less banana flavor.

YES! It will be the best banana bread you will ever eat. My mother-in-law makes hers after her bananas have turned black. If you have any bananas that are overly ripened, but you aren't ready to make the bread. Put them in the freezer for later.

yes not only do they have a more pungent flavor they are easier to mash up lol they also will bring more moisture in your bread ...i have a few ripe bananas it is snowing outside has been all day...thank you so much!!! i am going to bake some banana bread

The riper the banana the sweeter it is and the easier it is to mush up in the batter. It's a good way to use up over ripe bananas.

absolutely,because that's when their sugar content is at the highest so they have more flavor and are easily mashed.In fact if you have over ripe bananas and no time to bake a bread you can pop them into the freezer for later use.I have a great and easy BB recipe if you'd like I can send it to you,let me know.
