Swiss Beef Steak
1 lb ground sirloin (preformed patties will do well)
1 tablespoon butter
salt, to taste
pepper, to taste
4 slices swiss cheese
1/4 small onion, sliced
1 cup
1 (14 1/2 ounce) can beef gravy ( or homemade from broth)
Shape into patties. Season patties with salt and pepper to taste. Grill, or broil. to desired doneness.
Remove patties to a plate and keep warm. Top each patty with a slice of swiss cheese. In same pan, saute mushrooms and sliced onion in butter until tender. Add the beef gravy and warm through.
Top cheese covered patties with the sauteed onions,mushrooms and beef gravy.

Steak au poivre is a classic.
4 steaks patted dry
Salt
3 Tbs. coarsely ground black peppercorns
Olive oil for the pan
1 cup red wine
4 to 6 Tbs. butter
Heat the oven to 500°F. Sprinkle the steaks with salt on both sides, and then press the ground peppercorns into the steaks on both sides. Set a large cast-iron pan over medium-high heat and add just enough olive oil to make a light film. When the oil is very hot, add the steaks, cooking until nicely browned on one side, about 3 min. (If the pan is small, work in batches.) Flip the meat over and put the skillet in the oven. For medium-rare steaks, roast for 3 min. for 6-oz. steaks; 4 min. for 8-oz. steaks. Check for doneness with the tip of a knife or by pressing with your fingertips, keeping in mind that the steaks will cook a bit more as they sit. Transfer the steaks to a warm plate and tent with foil.
With a spoon, remove any fat from the pan. Put the skillet back on the burner and heat to medium high. Add the wine and cook until reduced to 1/4 cup, about 7 min., scraping up the browned bits with a wooden spoon. Whisk in the butter a little at a time, whisking until completely melted. Taste and adjust the seasonings, drizzle the sauce over the steaks, and serve immediately with more sauce on the side.

Slice the beefsteak thinly across the grain. It helps if they're still a little frozen.
Add some garlic and your favorite dried spices. Then stir fry it with a little oil in a very hot pan.
Add some chopped veggies (fresh or frozen) like bell peppers, onions, broccoli, carrots, tomatoes or asparagus. serve with a little rice. Enjoy

marinate them in teriaki and lemon juice then sprinkle on garlic powder and broil them. if you hav'nt used your broiler before you will quicky learn to love how great it works on meats! note though that broiling is funny in that it will cook very slowly at first looking like nothing is happening then in just a couple few mins it will go from near raw to done, also the second side will cook much faster than the first so watch them closely

Broil them if you can't grill them. Add mushrooms & onions & A1 & you've got a winner!
