I bake all my bread at home rather than buy it. Its cheaper and it takes better. However, it does dry out quickly. The dried ends get cut off and cubed so the rest of the loaf can be used. My dilema: I need more things to use the dried bread for than bread pudding and stuffing! It rarely stays in sliced form, so French Toast is hard to manage.

What are some good recipies for dry cubed bread for a family whose tastes are not very adventurous?

This is one of my favorite salads.

PANZANELLA
(Bread and Tomato Salad)
Can be prepared in 45 minutes or less.

3/4 pound day-old crusty peasant-style bread, cut into 1-inch cubes (about 6 cups)
2 large tomatoes (about 1 pound), trimmed and each cut into 8 wedges
or
1 lb of cherry tomatoes, halved
3/4 cup sliced unwaxed cucumber (optional)
1/2 cup sliced red onion
1/2 cup extra-virgin olive oil
4 tablespoons red-wine vinegar
20 fresh basil leaves, julienned

In a serving bowl stir together the bread, the tomatoes, the cucumber, the onion, the oil, the vinegar, the basil, and salt and pepper to taste until the salad is combined well.

Serves 4 to 6.

There are some good cheese stratas that use alot of bread pieces/chunks in them. Croutons, are always a good way to use up bread. Make bread crumbs and use it to bread pork chops, chicken or use in favorite meatloaf recipes. Being European, I was raised on 'Poor Mans French Toast" I call it. (You don't want to know what the Swiss called it!) You just use the same ingredients you would for french toast, except that after you pour your egg/milk/ mixture into the pan, you would toss in chunked up bread --as much as absorbed the egg mixture. Let it set, stirring it around occasionally, so the bottom won't burn and the egg/breads will set. Serve with pancake syrup, applesauce or just fruit syrup and powder sugar over top. Bacon or ham--or not! I still make it for us and now make it for grandkids.They love it. It uses alot of bread, is good for breakfast, the only thing is that it isn't as 'pretty' as Rich mans french toast! Enjoy! If you want the cheese strata recipe, just email me.

Toss them in oil (and/or a little butter) and dried herbs and bake in the oven to make croutons to add to salads and soups.
Make bread crumbs and use for breading(duh), toppings and meatloaf.
Make a fondue
Make Italian Bread Soup (link below) I also add parmesan cheese rinds to this... great if you have any.nothing goes to waste.
Birds like bread bits, too, lol.
