If you're storing it in a plastic bread container it could be that there are still mold spores from a previous loaf gone bad. Anytime something molds in plastic you must treat it with bleach to kill the mold.
If you're storing it in the original bag it came in it could be the combination of too much moisture and too high a temperature where you're storing it.
The best way to store bread is out of the original bag and in Tupperware on a raised grid to promote air circulation.
You might try freezing half a loaf and using only half at a time.

Possibly because it's kept in a plastic bag, that makes it moist & warm, ideal breeding ground for mould.
It's amazing how long bread lasts though, which must be down to all the preservatives bunged in it. Does this mean Quality bread goes stale the next day?!

yep - it's the plastic bags they sell em in. good old fashioned paper wrapping does not go mouldy, just hard & stale. Plus this was bread that you had to cut yourself so not any space between slices for mould to grow

Todays plastic bags are getting better and better. Years ago bread came in paper bags and many countries still sell it this way.
Generally the countries using plastic more and more are the ones having the mold problem.

I don't know why but I avoid it by keeping most bread in the freezer and leaving a little in the fridge. Bread bin isn't used much anymore

Because it is full of chemicals to keep it soft for as long as possible! Hence it goes mouldy before it goes stale and hard!!

I think its because of all the chemicals in it
If you buy a loaf from your local baker it stays fresh a lot longer so it must be something they are adding to it
