They enjoy quality, not quantity. If you take a closer look, you'll see that they only take a bite of each dish, and savor it for a long time.
Most Americans (and most people in general) eat too fast, and their brain needs more time to send signal to the stomach to stop eating. Chefs and food testers are trained to be aware of each flavor in the dish and eat slowly. There is a simple way to prove this-try eating really slowly (chew each bite several times) and focus on how it tastes (do not read, watch TV, drive ,etc). You will see that you will feel full after couple bites.

Competition judges and tasters in research in development also dont swallow everything that they put in their mouth. They spit out a lot of it. Would you work in a test kitchen and eat 25 different kinds of a blueberry muffin to find the next recipe to be sold by your company? You would get sick of eating all those muffins, and quite full. I also spit out a lot of food when I am working. I cant stand broccoli and carrots, but I have to make sure they are properly seasoned and cooked, so I taste them and spit them out.

You're tasting so much during the day, that you only take small tastes. That also leaves you pretty satisfied during the day. Also the job can be pretty physical; always on your feet, hot kitchens, running all over the place to get your shopping done, lugging bags of food around, cutting, lifting pots, pans and bowls. You can burn a lot of calories and stay pretty fit.

Not only do we taste small bites all day which means not wanting a full meal. Plus running around the kitchen, to the backstock, stress, heat, it all burns calories. I lost 50+ pounds being a cook.
