I know by the change of color and the length of time they remain on the trees to get "fully" ripe. They are large, have thick skin, fully developed seeds and are juicy.
However, those in the supermarket, are picked before their time and change color in transit. These are called "force" ripe. They are smaller, have fine skin, undeveloped seeds and not as juicy.

Family has been in the fruit business for 47 years, so to answer your question when the lemon is dark yellow, not light yellow, it is ripe. Size has nothing to do with it.

Lemons are ripe when they are usually a bright yellow color and if you press your finger gently against a lemon, the area will "bounce back".
