I think a buffet would be the best in your case. A variety of both meat and vegetarian dishes. And a buffet is usually less costly. I don't care much for sit down dinners, because the ones I've been to have been cold by the time it's served.

Are they lacto-ovo veges (eats milk, eggs, cheese) or vegans (nothing eaten or used from an animal)?
There are many a good pasta dish that can be made for the veges. Just make sure if they're vegan that the pasta is egg-free.
There are also a few good meat-subsitiutes that can be used as an alternative. You just have to find one. Some of it is down-right awful. :)
