This is how i would do it.

Tom's Slo-Cook Pork Chops - this may be a little harder than opening some cans but it's much healthier and will taste great.

4-6 Thick cut chops (depending on size of cooker)
2 Tblsp veg. oil
2 carrots sliced in 1/2" coins
2 stalks of celery sliced 1/2" thick
1 large onion chopped
Salt & pepper
1 Tblsp dried herbs - Thyme, oregano, marjoram or basil
2 cups low salt chicken broth + more if needed
4 russet potatoes or sweet potatoes

Season chops on both sides w/ salt and pepper. Heat oil in heavy skillet and brown pork chops on both sides.

Layer carrots, celery and onion in crock pot, place pork chops on top. Add dried herbs & enough broth to cover. Cook on high for 2 hours, and then add potatoes and more broth or water so that the tops of potatoes are just above liquid. Cook 2 hours more or until potatoes are done.

To make gravy remove pork and veggies to platter.
Melt 3 Tblsp butter in skillet and stir in 3 Tblsp. flour. Cook flour and butter on medium-high heat stirring constantly until flour turns a light golden color. Pour in 2 cups of cooking juices and heat to boiling, reduce heat to low and cook 2-3 minutes until gravy thickens, adding more cooking liquid as necessary.

You can always do Pork Chops and sauerkraut. I brown the chops then cook them in the sauerkraut until they are done or falling apart.
I also sometimes cook them in Apple Cider until they fall apart and mix it with BBQ sauce. Great pulled pork bbq.
