Fettucini Carbonara Ala Fratelli

Ingredients

(2 servings)

3 sl Bacon, cut into 1" pieces
3 tb Onion, diced
4 Garlic cloves, crushed
3/4 c White wine
3/4 c Half-and-half
1/2 c Romano cheese, grated
1 Egg yolk
2 x Servings fettucini, cooked
Chopped parsley for garnish


Instructions

In an 10" pan, fry the bacon until the fatty portions are just beginning to turn clear. Add the onion, and saute over high heat until the onion is translucent. Drain off the fat, remove the bacon and onion, and set aside.
Add the garlic to the pan, and deglaze the pan with the wine, scraping up any bacon leavings. Simmer for about 1 minute. Add the half-and-half to the pan, and wait until the sauce come back up to the simmer (with practice, this can be done so that the half-and-half does not curdle in the wine. If it does curdle, that's okay - the taste will still be there, it just won't look as nice). Add the Romano cheese (parmesan is acceptable, but the taste will be a little more pungent), and stir until smooth, about 30 seconds. At this point, the sauce may be removed from the heat and held for about 15 minutes.
To serve, bring the sauce back up to temperature. Add the cooked fettucini to the pan and toss to coat the pasta. Add the bacon, onion and raw egg yolk, and toss to mix thoroughly. Dish onto two plates, garnish with a bit of chopped parsley, and serve immediately.

Fettucini Carbonara

5 eggs
1 cup freshly grated parmesan cheese (NOT that Kraft Stuff)
2 tablespoons chopped fresh parsley
12 ounces dry fettuccine (or fresh fettucini(Pasta dough #1)
2 tablespoons butter
2 cloves garlic, minced
1/2 lb sliced button mushrooms or porcinni mushrooms
1/2 cup light cream
salt & freshly ground black pepper

Heat a large pot of salted water on high and begin to cook pasta if it's dry.
If it's fresh wait until after youve prepared the sauce as it will only take 3 minutes to cook.
Beat together the eggs, parmesan cheese and parsley until eggs are blended well.
Heat a large skillet over medium high heat and add the butter.
Saute the garlic and mushrooms for 3-4 minutes.
Add the cream and heat through.
Drain the pasta and return to pot immediately.
Add the mushroom and egg mixture, tossing for 2 minutes.
Serve at once.

INGREDIENTS

* 1 pound dry fettuccini noodles
* 8 slices bacon
* 4 eggs
* 1/2 cup grated Parmesan cheese
* 1 1/4 cups heavy cream
* ground black pepper to taste

DIRECTIONS

1. Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
2. Fry bacon in skillet over medium heat until crispy, remove and drain on paper towel. Chop with knife into bits.
3. Beat the eggs, cheese and cream in a bowl, then add the bacon. Pour over the pasta in the pan and toss gently using tongs.
4. Return the pan to a very low heat and cook for 1 to 2 minutes, or until slightly thickened. Don't overheat or the eggs will scramble. Season well with black pepper and serve.

FETTUCCINE CARBONARA

1 lb. fettuccine (can use plain, spinach, etc...)
4 tbsp. butter
4 tbsp. flour
2 c. cold milk
4 oz. bacon slices cut in 1/2" pieces
2 eggs
2 oz. grated fresh Parmesan cheese
Salt
Pepper
1 tbsp. butter, butter or light oil

Bring 1/2 gallon water to a boil over medium heat. Melt 4 tablespoons butter in a double boiler top or a small heavy saucepan. Stir in flour. Blend well over low heat. Stir in cold milk and heat. Beat eggs in medium size bowl. Add the white sauce you just prepared. Add salt, pepper and cheese; mix well. Melt butter in medium skillet, add bacon pieces and cook until golden. Remove from heat and add sauce; mix well. Return skillet to medium heat, stirring constantly until bubbly. Remove from heat. Cook fettuccine according to package directions. Drain well. Place a few spoons of sauce in serving dish, add fettuccine and cover with remaining sauce. Serve immediately. Serves 4.

the one above is too complicating..
i'm a cook at the shangrila hotel singapore..
and this is how i do my cabonara sauce in less than 20mins that goes with any pasta..

cook pasta(fettucine)..
when ready toss with a litttle olive oil, put aside.. now the sauce..

in pan, heat a little olive oil.. add in sliced onion, lots of broken bacon and chopped up ham.. saute for awhile.. when hot, add a little white wine, and ignite.. let it reduce abit.. then add the cream.. reduce abit.. add a little salt n pepper.. then add in the pasta... toss a bit.. off the fire and stir in an egg yolk..

voila.... fertig..
