I have some frozen breaded chicken filets. In the past, I have just heated them up and ate them with a couple of side dishes or diced them up in a salad. But, I am looking for something a little more creative to liven them up. Any ideas or recipes?

This is the receipe for breaded chicken fillets:

INGREDIENTS

* 6 skinless, boneless chicken breast halves
* 2-1/2 green chile peppers, chopped
* 3 green onions, chopped
* 1-3/4 teaspoons grated lime zest
* 1-1/4 limes, juiced
* 1/3 cup and 2 tablespoons chopped fresh cilantro
* 1 tablespoon and 2-1/2 teaspoons fish sauce
* 5/8 lemon grass
* 1/2 teaspoon salt
* 1-1/4 teaspoons white sugar
* 1-3/4 teaspoons prepared Dijon-style mustard
* 1/2 cup and 1 tablespoon and 2 teaspoons dry bread crumbs
* 1-3/4 teaspoons grated Parmesan cheese
* 1-3/4 teaspoons toasted sesame seeds
* salt and pepper to taste

DIRECTIONS

1. In a food processor, combine chile peppers, green onions, lime zest and juice, 1/2 of the cilantro, fish sauce, lemon grass, salt, sugar and mustard. Blend until smooth. Rinse chicken and cut to appropriate serving size. Place in a bowl with blended ingredients and refrigerate for 1 to 4 hours.
2. Preheat oven to 350 degrees F (175 degrees C).
3. In a shallow dish or bowl mix together the bread crumbs, cilantro, cheese, sesame seeds and salt and pepper to taste. Remove chicken from marinade (disposing of any remaining marinade) and roll in crumb mixture until well coated on both sides.
4. Place coated chicken in a lightly greased 9x13 inch baking dish (if desired, dab with olive oil on top for a crisp finish) and bake at 350 degrees F (175 degrees F) for 20 minutes or until chicken is cooked through and juices run clear.
5. NOTE: You can make a dipping sauce by blending 2 green chile peppers with some fish sauce and sugar and topping the blend with some sesame seeds.

This the receipe for something else that you can eat with it:

INGREDIENTS

* 1 medium head garlic
* 1 teaspoon olive oil
* 12 potatoes
* 1 cup butter, softened
* 4 teaspoons wasabi powder
* water as needed
* 1/2 cup milk
* salt and pepper to taste

DIRECTIONS

1. Preheat oven to 400 degrees F (200 degrees C).
2. Remove papery outer skin of garlic bulb. Rub with olive oil and place on a small baking sheet. Bake in preheated oven for 45 minutes, or until skin can be easily pierced with a fork.
3. While garlic is roasting, peel and quarter the potatoes. Place in a large pot and cover with water. Bring to a boil and allow potatoes to simmer until very soft, about 20 minutes. Drain water and mash potatoes with butter until smooth and fluffy.
4. Squeeze softened garlic cloves out of skin into pot; in a small bowl, mix wasabi powder with just enough water to form a thick paste. Mash garlic and wasabi paste into potatoes, pour in milk and continue to mash until mixture is light and fluffy; season with salt and pepper to taste and serve hot.
