No matter what you use as a meat make sure you marinate it for 24 hours. this will make sure that the meat, chicken or shrimp is going to stay tender after you grill it.
I like to use a can of Stewed Tomatoes, Onion, Green Pepper, Salt, Pepper, Cumin, Paprika, Cilantro and Garlic in mine.
Also when using Chicken or Beef make sure to cut in into strips a little less than half an inch thick. This allows all of the meat to absorb the flavors of the sauce.

Macayo Fajitas
Ingredients
(6 servings)
1 tb Salt
1/4 tb White pepper
TOPPINGS:
1/4 Lime, squeezed
1 c Sour cream
3 Cloves fresh garlic, chopped
1 c Guacamole
2 tb Vegetable oil
1 c Salsa
6 Lime wedges

(This basic fajita recipe is from the Johnson family which owns the Macayo chain.) **

For marinade, in a large bowl, whisk together salt, pepper, lime, garlic and vegetable oil. Put meat in marinade and set aside for at least one hour.
Heat oven to 200 degrees; set tortillas in for 1 to 3 minutes, to warm. Remove and put in a covered basket.
Heat a large skillet and add olive oil. Add marinated meat and saute until onion becomes transluscent.
Place cooked meat in a large bowl or platter and serve with tortillas, toppings and garnishes.
For each fajaita, fill a tortilla with meat and desired amounts of garnishes and toppings and roll up like a burrito.
Serve with refried beans, black beans or Spanish rice. Make 4 to 6 servings.
VARIATIONS: For spicier marinade, add cayenne pepper or crushed dry red chili pepper. Instead of lime juice, try pineapple juice, papaya juice, beer, wine or barbecue sauce.*
*(Cooks note:) I like to use tequila, and marinate myself a bit while I'm doing the cooking. It makes it much easier to roll up like a burrito. It is the unrolling that becomes a bit difficult.

FLAT IRON FAJITAS
2 lbs flat iron steak (If flat iron steak is unavailable, you can use flank steak or skirt steak)
1 teaspoon southwest dried chipotle powder (can use Southwest Chipotle Seasoning)
1 teaspoon olive oil
1 yellow onion, sliced lengthwise
1 red bell pepper, seeded and sliced lengthwise
12 (6 inch) flour tortillas
shredded cheese
Flat Iron Steak Fajita Marinade
1 cup soy sauce
1 1/2 cups pineapple juice
1 tablespoon ground cumin
1 1/2 teaspoons fresh garlic, minced
3 tablespoons fresh squeezed lime juice
Pico De Gallo
1 cup roma tomatoes, diced (you can use canned organic diced tomatoes)
1/4 cup white onions, diced
1 1/2 tablespoons cilantro, chopped finely
1 tablespoon jalapenos, minced
1 teaspoon lime juice, fresh
1/2 teaspoon kosher salt
Guacamole
2 small avocados, cubed or 1 large avocado, cubed
1 tablespoon lime juice, fresh
1/4 cup pico de gallo
1 1/2 teaspoons garlic, minced
1 teaspoon olive oil
1/2 teaspoon kosher salt
Cilantro Cream Sauce (I hate cilantro but, I included it for those who like)
1/2 cup sour cream
1/8 cup cilantro
1 green onion, chopped
2 teaspoons lime juice
salt
pepper
Put marinade ingredients and steak in a large zip-lock bag or container with lid and marinate in refrigerator overnight.
Combine all the ingredients for each sauce; Pico De Gallo, Guacamole & Cilantro Cream Sauce. Do not mash the avocados in the guacamole - leave as cubes. Cover and put in refrigerator.
To prepare the fajitas, preheat grill or broiler on high. If you have a cast iron fajita skillet, heat it in the oven for 20 minutes. Place steaks on grill or on broiler pan in oven. Grill or broil for 8 minutes. Flip and continue grilling for 6 minutes for a medium rare steak. Slice steak across the grain.
Meanwhile, heat olive oil in a large sauté pan over high heat. Add onions to pan and cook 1 minute, stir constantly. Add peppers to pan and sauté for 1 minute, stir constantly. Season with 1 tsp of Southwest Chipotle Seasoning. Remove pan from heat.
Place vegetables on the heated Cast Iron Fajita Platter or on a serving plate. Place sliced Flat Iron Steaks on top of the vegetables. Serve with tortillas, Pico de Gallo, Cilantro Cream Sauce and Guacamole. Top with shredded cheese, if so desired.

Cook flank steak. Mix it with sauted peppers and onions. Then, put them on some warm tortillas. Depending on what u have top with salsa, sour cream, or guacamole. Voila!!
