buffalo would be the leanest with the best flavor, although it is considerably more expensive. Turkey makes an excellent runner up, and in fact I prefer ground turkey over ground beef; I like the flavor much better.

Normally your fowl will be your leaner and in turn healthier meat to use. You can find lean ground turkey at most local grocery stores, and if you season it properly most palates cannot discern it from ground beef.

There are also steps you can take to make your fattier ground meats such as ground beef and sausage healthier, what you want to do is cook your meats thoroughly in their own fat, then use a colander to drain as much fat as possible from the meat. From there just continue on as you would had you not drained the excess fat.

Probably Buffalo or turkey. Both are very lean. Depends on a lot of factors... how the animals are raised, fed and slaughtered all have major impacts.

Actually, I prefer deer meat...ie..venson.
The meat even when ground is 98% fat free. It has good flavor and absorbs the spices and other ingredients very well due to the low fat content. I've cooked chili using venson for in-laws from Texas and for military families around the United States, I always get rave reviews and reactions.

At the moment... PORK !! We've had along Spring and Summer full of lamb... so I'm tired of it at the moment. Truly though it would be Seafood... but being 200+ miles from the coast in a rural area it is SO difficult to find any it's just depressing.

go with the ground buffalo, its very tasty. its also very good to make buffalo burgers
