The environment of fish, salt water, indeed has a salinity of about 3.5%, compared to 0.7% of fish meat. The metabolic processes of fish would not function at this salt concentration. Thus fish "meat" is hypotonic compared to salt water. Various fish, and other marine animals like whales, crocodiles, etc., have different mechanisms of getting rid of this excess salt.

Fish are living beings, just like humans, and their bodies can't handle much more salt than we can. Just because they live in an environment filled with salt doesn't mean that they absorb all of that salt, or would taste salty.

That would be like saying that someone who worked in a strawberry field should be made up of strawberries.

Is it because the salt is filtered out through the gills? and I don't add salt to fish.

It's just like us, and can't actualy drink salt water. It has special filters to get rid of it all. Salt water fish can only survive in salt water because of osmosis.

Have you eaten an anchovy lately? :-) Seriously, I can only suppose the other fish either don't take it into their bodies or get rid of it.

They swim in the ocean, aren't MADE of the ocean. They don't absorb the water.
